Dr. Hamilton's Deliciously Easy Veggie Soup
1-2 T. butter
1 medium onion, chopped
3 celery stalks, chopped
3 large carrots, chopped
3 garlic cloves, minced
1 bag frozen peas & carrotts
1 bag frozen peas
1 bag frozen green beans
4 c. organic vegetable broth
sea salt, black pepper, and Bragg's Sprinkle Seasoning to taste
extra virgin olive oil, for drizzling
Set large pot with broth over medium high heat.
Saute onion, celery & carrrots in butter until slighlty tender. Add garlic & saute one more minute. Add all to broth & add in frozen vegetables. Season to taste. Let heat through about 20-25 minutes over medium heat.
To serve, pour in bowls & drizzle EVOO over. ENJOY!
Anything remaining in the pot I let simmer on low for a few hours to marinate the flavors even more before storing it away.
To rewarm, spoon out desired amount in small pot & heat over medium.
Can also top with diced avocado if desired.
LENTIL SOUP
2 tablespoons olive oil
2 large onions, cubed
1 teaspoon minced garlic
1 tsp tumeric
3 carrots, diced
2 stalks celery, diced
3 1/2 cups crushed tomatoes
1 1/2 cups lentils - soaked, rinsed and drained
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 bay leaves
7 cups chicken stock (check ingredients and make sure it's clean or make your own)
1 sprig fresh parsley, chopped
Directions
In a large stockpot, saute the onions in oil until they are glossy. Stir in garlic, tumeric, celery, carrots, and saute for 10 minutes.
Once the vegetables have sauteed for 10 minutes stir in tomatoes, chicken stock, lentils, bay leaves, salt, and pepper. Stir well, then bring the mixture to a boil. Slowly reduce the heat and cook for 1 hour on low to medium heat; or until the lentils are tender.
Sprinkle the soup with parsley before serving.

A Saucy Side
